Salad w/grilled chicken.  I keep croutons @ work.  For dressing I either put it in a corner of the tupperware or bring the whole bottle separately (so the salad doesn’t get soggy).

@RunningGal:  We usually make extra food on Sunday so we get leftovers for 2-3 days. So we’ll make something big like a roast chicken with mashed or roasted potatoes (or rice), a couple different kinds of veggies, gravy, etc. I love having warm lunches.

Yesterday I made an orange chicken recipe in the slow cooker and it turned out really well. So we’re having jasmine rice and orange chicken for lunch today.

I can’t be asked to make lunches in the morning so the path of least resistance is to plan for leftovers.

I eat out usually once a week. One day I’ll usually have a Mr. Noodles or something (not the healthiest but it’s fast and warm).

I usually bring leftovers too.  I like a warm lunch better than a cold sandwich or a salad.  Today I have cabbage rolls, a roll with butter, and cucumber slices.  Oh and a chocolate chip cookie.  I am making chili tonight, so I will have chili for lunch tomorrow.

I usually eat out (Subway or Chinese) once a week.  I will occasionally bring a sandwich, but I get bored with them easily.

Yesterday I baked three chicken breasts with salt, pepper, and a few spices. I diced them, divided that up into five containers, and added a cup of brown rice (cooked with chicken broth) and a handful of frozen peas to each. Quick, healthy, and now I have lunch all week!

Edit to add: of course, that only works if you can eat the same thing every day for a week. Luckily I am one of those people!

I almost always do a big salad with grilled chicken, too.  I didn’t think it would be very filling or satisfying, but it really is if you have some sort of protein.  Sometimes I mix it up and put beans, tofu, pork chop, salmon, etc on it.  Also avocado, peppers, craisins, and some almonds.  Yum!

I typically have leftovers. I also like bringing a salad or a half can of soup and a half sandwich with some fruit and/or pudding. Today I went out and get a rotisserie chicken from the grocery store and a steam bag of vegetables. I will take the rest of the chicken home with me and use it for salads for the rest of the week.
