(Closed) lunch ideas

We actually hardly ever make sandwiches for lunch.

90% of the time it’s leftovers from dinner the night before.

If there’s no leftovers we’ll do cereal for lunch with fruits.

Or spring rolls is a great easy healthy one!

Leftovers usually so it can be anything. Today I have a chicken enchilada and cut up veggies. Darling Husband has a chicken enchilada and homemade mac and cheese. Tonight we’re having salmon, sauteed green beans and mac and cheese. Tomorrow’s lunch will be salmon and rice. It’s easier for me to make a couple extra portions at dinnertime and just pack them. I also make a larger batch of something that can be added on as a side or be a main dish through the week.

One thing I always have is a big bag of baby arugula and ranch dressing.  I make myself have a little salad every day, and now I miss it if I don’t.  I’ll add to it with a block of cheese, some other veggies like hothouse cucumbers and radishes, then bring in leftovers.

Oh, and I always have 2 or 3 kinds of tea in my file cabinet.

I do a lot of the same things as @sparkle.  Or I’ll make a big batch of soup or a casserole and that will be my lunch for the week with a side salad.

Usually leftovers. If I don’t have any I get a lean cuisine/smart one.  🙂
