We both absolutely adore mac and cheese and A kept mentioning he definitely wants it on the reception menu….then we started thinking…why not make that the centerpiece? We are having a casual backyard reception with lots of kids, a handful of vegetarians, and whole bunch of picky eaters, so it’s really a perfect fit! This restaurant is known in town for their mac and cheese.
Spring wedding, 100 guests, casual, evening time, so it will be a full dinner
Don’t you love that they’re all named after bands? We’ll definitely make sure we have cool signs with the band name as well as what’s in them..
These are the ones our caterer recommends- We’ll need the equivalent of six pans total- (this makes them entree servings)
Double Pan- Lovin’ Spoonful- Regular Mac and Cheese
Pan of Green Day: Spinach and oven roasted roma tomatoes
Pan of Buffalo Springfield: Buffalo Springfield – Buffalo chicken topped with blue cheese
Pan of Pink Floyd: Bacon and carmelized onion
Pan of Fleetwood Mac: Fresh mozzarella, pesto and tomatoes
I would eat anything and everything on the menu. A doesn’t eat pork or mushrooms, so if we’re having five kinds, I’d like only one to be something he wouldn’t like, it’s his party, too! I’m thinking of taking one of the veggie only options out and adding the Nirvana – Chicken and roasted red peppers. That still leaves the plain and one veggie option.
Since we’re doing such a brief ceremony and a very short photo session, we’ll put apps out and then serve dinner 30 min later (leaving the apps out for people to enjoy)
Apps:
Shrimp Cocktail
Homemade Chips/ BBQ sauce (a very regional thing)
Veggie Tray
Fruit Tray
Hummus/Pita (possibly)
Dinner:
Mac & Cheese Buffet
Garden & Caesar Salads
Any thoughts/comments/additions you would make? Thanks, Bees!
