I am the grooms mother and we want to make cake balls for wedding favors.. we are looking to make around 900!~~ so.. heres my question… can i freeze the balls undipped and them get them out and dip the week of the wedding and put in air tight containers?? do you think they will be ok?
I know if we dip them and then freeze we may have a moisture issue.. all input will be appreciated.. i know im crazy for making them .. but they will be an inexpensive wedding favor…

I am used to making large quantities of cake balls. My first suggestion is to invest in a freezer vacuum system, I got mine at Tues Morning for less than $30 and I use it constantly for more than just cake balls. I would freeze them without the coating and pull them out a day or two ahead of time to dip them. If you dip them frozen they stay together really well, I usually freeze them before dipping anyway.

Whoa how big is your freezer to store 900?? Not being sarcastic, just a logistical issue you should think of. I would be a little concered with freezing them, based purely on my experience with defrosting uniced cupcakes. They’re still good, but a little stale. Although, I’m sure I wasn’t too vigilent with really freezer-proofing them as I knew they were just for me.

@tksjewelry:thanks!! we may just end up making some for each table.. that would cut down immensely on the amount we make.. thank you for the suggestions about the vaccum system.. i may just have to get [email protected]

@JerseyGirlLaur: yes.. we may end up just making some for each table. .we are maybe heading toward 300 for wedding.. thinking 3 in each box~~ but we will probably cut that down.. i made a batch and we got 75 out of one cake mix so i thought that was not too bad?.. thanks for all the tips~~
