Okay, so let me recap. I have a type A personality so I admit, I have been a little crazy about the wedding talk. I’ve been shoving my laptop in SO face when looking at moissanite, flowers, centerpiece ideas, printing websites, ect. He always had a look of dread when the word “wedding” came up. My best friend, who is marrying us, is married and I asked him what the frack! He told me to just stop the wedding talk and do my own thing. SO needs to see that I can be fine without him and SO needs to feel like he can “chase” me. FINE! UGH! STUPID BOYS!
So, I stopped talking about the wedding, the weddingbee, my blog, my cute little finds, my ever growing DIY list, my spreadsheets, budgets, ect. Then I decided that I NEED to stop being so clingy. Before him I was super inderpendent and did lots of things on my own. So after work I would come home, we would have dinner and he would say he’s going to go play a computer game with his friends. Instead of whining that he’s not spending time with me, I said ok. I’ve caught up on my cleaning, reading, working out, talking to friends, and just relaxing. SUDDENLY SO has been seeking me out. One night I told him I was going to just take a bath and paint my toenails and we could do something after. Ladies, that man waited for me on the couch for 30 minutes! He seriously knocked down the door and carried me out of the bathtub to sit with him. Sounds barbaric, but it was romantic!
We have had sex everyday for the past 8 days! (I keep track! TYPE A!!!) And here is the kicker! Thursday he was off. I came home from work and my house was spotless and smelled like lemon bleach and HE COOKED DINNER! No ladies, not mac and cheese and hamburger. HE COOKED A POT ROAST in the slow cooker! So after dinner I started to clean up and he said we weren’t done. Out of the stove came warm apple pie and he topped it with ice cream. WHO IS THIS MAN!?
So tonight I am pulling out all the stops and I am making engagement chicken! It’s in the sink thawing right now. I am serving it with roasted red potatoes and dinner rolls. He doesn’t like green veggies too much so I am making it with green beans. He likes that.

The chicken is about to go in the oven. I am hoping it will be done in two hours. He is working late so he should be walking into the house as it finishes up!

Luck luck luck! Lol, that is one large chicken! I’m thinking you’ll have leftover engagement chicken all week – do you think it retains its potency when it’s reheated?

It’s been in there for about an hour so far ladies and it smells so good! Mr. Tattoo should be walking in about another hour. I’m going to start the red potatoes in about 30 minutes.

OKAY! It turned out so good! He walked in the house as I was putting the dinner rolls out. He said his mouth was watering from the time he opened the door.
The chicken turned out so tender! It was hard getting it out of the pan because it was falling apart.
So while he was in the bathroom washing his hands with my daughter, I snapped a picture. I think he would have been weirded out if he seen me doing it. He would have thought it was something for my blog and would have asked what’s so special about the chicken that I have to take a picture of it. I don’t take pictures of my other food.
When he took the first bite, he closed his eyes and was like “mmmmmmmm, it’s so good.” and then proceeded to inhale his dinner. I cleaned up and when I went to the living room, my daily planner was sitting open to today’s date. He wrote,
“Putting the little princess to bed early.”
“Shower date at 11:45 with Mr. Tattoo followed by bedroom activities.”
He’s been leaving me these cute messages all week. ^_^ Anyway, here is the finished chicken and some tips.
The directions say it will be done in about 45 minutes. It will not be unless you got a small bird. This was about 4.5 pounds and it took about 80 minutes to cook.
The directions say 1/2 cup of lemon juice. I used a full cup before cooking and then took an extra lemon and squeezed it on about 20 minutes into cooking before I flipped it. Maybe I bought big lemons, but I couldn’t fit two of them into the cavity.
Tie the legs together! The meat becomes so tender that the legs were falling off as I was taking it out of the oven.
This should be a no brainer…but spray the pan. ^_^ I forgot so now my pan is soaking in the sink.

OH! And we have leftovers so hopefully the magic gets more powerful as long as the chicken remains undigested. ^_^ He’s already talking about making sandwiches for his lunch with it!
