I would personally do a buffet (if the venue can accommodate it properly, as in they have the space and they can get your guests through the line quickly), and offer all three options.

I would be inclined to offer the chicken because like you said it’s a standard and a lot of people don’t consider pork a white meat, can they prepare it without the ham – do a different filling – and offer that with the pork?

I think you can do the pork and beef and exclude the chicken.  From your description, it sounds like the chicken may be a bit heavy, especially with the breading and ham.  I usually get chicken, but if I were a guest I’d probably opt for the pork instead.

Pork and beef.  If you both liked the pork, why not offer it?  You could do pork and chicken.  I wouldn’t think it was odd not to have a beef option.

If everything was good — buffet with all three options would be my pick.  That way everyone can have a taste of each and be just as pleased with the food as you were at your tasting.

If you don’t want to spend that much, then offer the two entrees that were the best — the beef and the pork (either plated or buffet). You are doing your guests a favor by forcing them to choose from the best options.  (Besides, the appeal of chicken is seriously overrated.)

Hm. Initially I chose chicken, but only if you can do it sans ham. If not, the beef. I don’t eat pork.
