Definetly appetizers.  Fruit tray, veggie tray, cheese and crackers.  Mini sandwiches (think ham biscuits, chicken biscuits, chicken salad, tuna salad, egg salad).  Deviled Eggs.  Hummus and Pitas.  Shrimp cocktail.  Chafing dishes of swedish meatballs, BBQ meatballs, and franks in dough.

You could also do a dessert reception with an assortment of cupcakes, cookies, brownies, lemon squares, pecan bars, chocolate dipped strawberries, cheesecake, fresh fruit tartlets, pies, make-your-own ice cream sundae bar… Plus a fruit/cheese/cracker display for people who don’t like sweets.

I plan on making a seprerate desset table with things I make. I plan on making cake and cookie pops, cookies, brownies, cupcakes. Good Luck with everything!

We’re having a large (300) wedding. For apps we’re having seared ahi tuna, mini chicken cordon bleu, buffalo shrimp. For dinner we’re having caesar salad, prime rid carving station, crabcakes, garlic mashed potatos, roasted carrots, green beans, dinner rolls.

I would make big dishes of things that can be prepped a day ahead and then thrown in the oven…salad, garlic bread and lasagna for dinner (could make a veggie lasagna alternative for veggies)

And I would pre-make apps that can be heated right before needed.
