Buffet dinner. Guests can have both entrees. Should I have a beef dish in place of the pork or chicken or would this be good enough?

Mushrooms on the side, please? I’d be sad if my choices were pork or mushroomed up chicken. Otherwise it looks awesome – and if I could have a giant plate of the mac and cheese, I’d be happy!

This menu looks really good, very tasty.
Two things to think about is that Chicken can very easily be undercooked and beef appeals to the masses.
But at the end of the day choose what you want to eat because its your wedding, your day 🙂

Here is how I would tweak your menu and why:
Appetizers: Mini BLT sandwiches or those BLT mini cup hors doevres. Because your menu leads me to believe you have a meat and potatoes crowd and the bacon will make their night 🙂
Smoked sausage slices, cheese slices (such as cheddar, Swiss etc), mustards, crackers
fruit tray, veggie tray – love this
but unless you have special pickles or olives in mind, or you just really dig them, I would skip “relishes” with this menu.
Prime Rib (or if you don’t like it, maybe beef shish kabobs with rice pilaf). Because you again seem to have a meat and potatoes crowd and the ones I know love beef
chicken Vesuvio – no to chicken and mushrooms since a lot of folks hate mushrooms
Roasted new potatoes
some sort of grilled sweet potatoes
macaroni and cheese
Green beans with almonds

Entrees look good. I would add at least two more apps it just seems really light esp for a vegetarian guest

I’m thinking of adding another 1-2.apps.
we dont have any dietary restrictions so I don’t have to worry about vegetarian foods or any allergies but that’s a good thing to know about your guests.

i would if you can afford it. We had 7 different apps passed and some people still didn’t get any or most of them, idk if it was a problem with the caterer or the amount of HDs we had, but I kind of regret not getting more. Everything else sounds delicious! Good luck!
