    I think a chicken is the safest option, especially since you only have one. I don’t eat beef or pork.

    I agree with PP. All meat eaters I know eat chicken but not necessarily pork or beef.

    I hate chicken, don’t eat pork.  if you are only doing one option, do you know for sure your guests will eat chicken, beef, or pork?

    If you can only have one option, chicken is safer than beef or pork.  Stuffed meats give me the heebie-jeebies so I voted Jack Daniels chicken breast.

    Chicken is definitely the safe choice. Although I never ever get chicken at weddings. I’d probably go with the pork tenderloin if I qas ordering just for me. Chicken for a group.

    Stuffed chicken!

    I am not a meat eater, but I will eat a chicken breast if one is put in front of me. I know lots of people who eat chicken, but not pork or beef. JD chicken also sounds tasty, but I don’t think it would be as universally liked. I personally would love to eat the cajun chicken torellini, but lots of people don’t like spicy food and cajun usually has some spice to it.

    If you only have one, i’d do chicken. It’s just a safe choice. Will you have side dishes? What about any guests who are vegeterian? I don’t eat red meat or pork, so I’d likely just eat side dishes unless chicken was an option.

    Stuffed chicken breast has a problem… done well, it’s lovely, but anything less than a five star caterer… probably boring and overdone.

    Seriously, isn’t ANYONE but me SICK AND TIRED of standard-issue wedding chicken? I want my guests to eat something *interesting.* At least the Jack Daniels chicken has an interestng spin on it and is more likely to be moist. 

    That herb crusted pork loin sounds the best to me, but JD chicken would probably go over the best with the most people. (It’s still chicken, but it has something special about it.)
