If you want something healthy, yummy, and easy to make, here’s my recipe for Chicken taco soup!



Boneless skinless chicken breasts

1 can black beans

1 can white corn

1 can rotel

3 cans chicken broth

1 package taco seasoning

1 TBL Ranch dressing seasoning (the dry stuff)


To DO:

Cook your chicken however you want.  Bake it, use left over chicken, whatever.  What I do is boil my chicken with chicken broth, cumin, garlic powder, and chili powder. Then I shred it.

In a large pot, mix all veggies. (Drain the corn first) Add in your cookied chicken, taco seasoning and ranch dressing.  Add as much chicken broth as you want.  If you like your soup chunkier, add less, if you like it with more broth, add more.  I personally use about 1.5 cans.

Let simmer for 30 minutes.

Feel free to serve by adding a little shredding cheese and crushed tortilla chips! It’s totally healthy and yummy and makes great leftovers~!!!!
