    I think it all sounds good except the entrees… I think you need a more “normal” choice aside from bison steak or trout.  It’s nice to have these interesting dishes, but I’d add a chicken or something “plain” or the less adventurous crowd

    I *love* local food menus so I think it’s great, although there’s a few things I’m not an enormous fan of personally (the boar and bison). I suspect though that you may get a lot of “I’d never eat that/I don’t like that” responses here though.

    @aleeblueeyes:  Maybe, to go along with the previous poster, instead of giving an option that incorporates NONE of what you like, could you pair the bison or trout with chicken?  So it’d be chicken a la king with trout a la colorado, or chicken a la king with bison a la colorado.  That way people will try something new, but be comforted by the old.  And then dye some of the food blue, and make them give some of it back…

    I am one of the “I won’t eat much of that” responders.

    I think it is great to travel to places and get to try their local foods, but I think there needs to be a balance of traditional vs untraditional foods.
