Let me just start by saying that I get on fine with my Future Mother-In-Law, and she’s always been lovely to me. Since we started planning our wedding, the Mother-In-Law has wanted to help make favours, invites, a groomsman cake – ANYTHING! I had decided early on that I was just going to buy the invites etc so declined her offer of help.
However, to make her feel involved (and keep her out of my hair!) I said she could make cup-cakes for the evening reception of our wedding. We are having a traditional tiered wedding cake, so these would just be something extra for our guests. She occasionally makes cakes for christenings / birthdays and such so I thought easy, right?
Well… in a recent conversation she started telling me how she was going to make the cupcakes, and then FREEZE them? Before defrosting them to decorate?! She doesn’t have a job, and I just told her to make as many as she can manage, so I don’t really see her need to make them way in advance.
I’m not a baker, and was hoping that some more kitchen-wise bees could advise me about the future of my cupcakes – will they come out OK, or a little worse for wear?. I told a pastry chief friend about her plans and she laughed – not a good sign! But as she’s doing this as a favour for us, I don’t feel as though I can start telling her what to do… Help!

Yes, they will come out just fine! My baker insisted hers is actually more moist when she freezes it.

I freeze cupcakes all the time, it’s no big deal. You can’t decorate hot cupcakes because the icing will melt off.

I have worked as a pastry chef. It is standard to freeze cakes and cupcakes. I promise, they will be no worse after a trip to the freezer (so as long as they are good going in :), and usually it improves their texture.

We freeze cupcakes, muffins, cookies, etc all the time. They taste just fine and often better!

IMO, they actually turn out better by freezing them than her making them the night before and leaving them at room tempature.

Phew! Thanks so much! Feel a lot better about this now. Like I say I’m not much of a baker myself, and hadn’t heard of people doing this before. But I guess we learn something new every day!

Its so much easier to frost and decorate when frozen. They will taste good too..you are fine

on my caking site quite a few bakers freeze their cakes with no drama’s – i wouldnt be concerned

We made cupcakes ahead of time and froze them for our wedding- they tasted great on the day! 🙂

Hey guys, I want to do this for our rehearsal dinner–how do you do it? Make a batch, let them cool, put them in…freezer bags? Plastic wrap?
And then how do you ice them–while they are still frozen, or do you have to let them defrost first?

You can freeze cupcakes?!?! I’m so going to do this when I make too many red velvet cupcakes to eat at one time. Woohoo! I learned something new today, too!
