Had to share this fabulous mojito cupcake recipe with the hive! I thought it might be a little weird (mom and Darling Husband said “ew” specifically), but so far everybody at work really likes them a lot!!!
SHF #33: Mojito Cupcakes
I followed the recipe sorta. I added some finely diced mint (i put it in a blender actually with the buttermilk), some lime juice, and some grated lime rind to the batter. The syrup I made according to the recipe but I only used about half of it, so I advise not making the whole batch. It got wasted. And finally, I added extra grated lime peel to the frosting and a few tablespoons of the leftover syrup in lieu of the rum, which gave the frosting a cream cheesy, buttery-rummy, mint-lime flavor. Just a hint. It’s still a nice rich frosting and very complimentary.
It baked up about 3 dozen full sized cupcakes. They took about 28 minutes apiece at 325.
I had to refrigerate them on Sunday (when I made them) so they kept well until today. They’re kind of dense and I’m not sure if it’s due to the refrigerator or that I overbeat the batter in my stand mixer. I tried not to, but I really wanted to make sure the lime zest was fully incorporated.
After I poured the batter into the liners, I dabbed on a dot of neon green food dye gel and swirled it around with a toothpick. For funsies.
They’re a fun “party” style cupcake. Sorry about the crappy iphone photo; i forgot to take a real photo before I left home!

Hmmm sounds so good! i love cupcakes but I am waiting for after the wedding to have snacks. I will be making these after the honeymoon! Thanks!!

You really have to add a lot of lime and mint for it to be mojito tasting. Most of the rum flavor comes from the syrup though.
I wonder….if I eat 5 of them….can I get drunk at work? lol j/k j/k. Pretty sure that’s not possible since the rum got boiled into a syrup, haha.

They look fun! I think a mojito cupcake is the only way I would like a mojito! I try so hard to get down with the mojito craze but I just can’t hang. I feel like I’m drinking a tree, the mint gets all stuck in my straw- such an ordeal lol. I actually don’t mind then when they’re made with coconut rum though. Anyhoo, maybe I’ll try the recipe for my girls one day, we’re all about cupcakes. I love them… its kinda my passion.

Ooooh those sound good! I’ve made tequila/ margarita cupcakes and my friend has made beer cupcakes… gotta add this one to the list!
