The easiest way to take care of the vegetarian AND add a little more variety to your buffet would be to add a simple pasta! That way, the vegetarians can toss the roasted root veggies (I’m a veg and root vegetables are my fave – good choice!) with the pasta and make a vegetarian pasta dish. Everyone else can just have the pasta with their meat or vegetables of choice. You could just have it tossed in a simple garlic and olive oil mixture, or a light marinara.

carlsolindsay:  Most GF people would not eat from the buffet as it could easily be contaminated or the food and trays, in general, exposed to gluten. GF’ers should request GF meals from you if they truly must be GF.

I think your food selections sound pretty great.

Honestly, it looks great. Nice combo of variety/choices with dishes that will appeal to everyone. Yum!

Sounds yummy, just make sure the vegetarians have enough to eat! I went to a wedding where I checked “veg option” on the RSVP card and it turned out to (LITERALLY) be the same buttered pasta and grilled cheese served at the kid’s table! We were starving, FI and I ordered pizza after the end of the reception.
