What a yummy post!
I think you could make a very extravagant combination with your options!
I tend to like a white cake vs. a chocolate cake, but I wouldn’t do just plain white. The White Amaretto, French Vanilla, or White Almond would give you just a little more depth of taste and would play off your fillings better. As for frosting, I prefer buttercream rather than fondant. All the fondant I’ve had has been stiff and chewy!
My choices are:
Champagne cake, strawberry or Raspberry creme filling with the chocolate ganache frosting. (or classic buttercream. I just think it would end up tasting like champagne and chocolate covered strawberries/raspberries)
Red Velvet, bavarian creme filling and classic buttercream frosting.
White Almond cake, chocolate mint filling and classic buttercream frosting.
Spice cake, bavarian creme filling and classic buttercream frosting.
