If your plane tickets are in your maiden name, you should wait until you get back to start changing things just in case.  Also, I think you should change your name on your passport if you plan on using it after you change your name (before it expires). It would suck to be going somewhere and be denied entry because of the name difference.

As for the banks, just wait until your name is changed.  We just wrote “for deposit only” on all our joint checks until I got my name officially changed for id purposes.

Your work won’t change your name until it’s legally changed, and you have proof of the legal change.  Otherwise, it’s fraudulent, because that’s not your name.

If you legally change your name, you should change your passport at the same time.  It’s important that all your legal documents match.

You should be able to deposit the checks under either name without a problem.  Banks generally understand that weddings happen in a day, and name changes take months.  I’d just go to the bank together to deposit them.  Bring a copy of your marriage license and your current ID as proof.

I would wait until your name change is complete to add each other to your bank accounts, but it shouldn’t be a nightmare to do it twice, once you have all the necessary paperwork.

Good luck!
