1. Yes you can use real  flutes for toasting only whilst using plastic silverware.

 I would have the champagne bottles at the bar and have the bartenders open them. If they are on the tables, I guarantee that someone will try to show their expertise, and open the bottles incorrectly thus wasting champagne as it spews over the table, floor, other guests etc.You will also have corks flying around the room.The waiters can pour.

2. You can use plastic glasses at the bar but I would have wine glasses for wine and oldfashioned glasses or tumblers for other drinks. http://www.smartyhadaparty.com

3. You can have special flutes for the bride and groom if you are into that sort of thing for a souvenir , but you don’t have to. Nor do you have to have special flutes for the bridal party.
