That could be fun!  What about something BBQ style?  Pulled pork?

I love the sandwiches idea! One thing we’re doing as a mid-evening snack — but I think would totally work for the afternoon — is some mini sandwiches paired with soup “shooters” (really just small mini size servings of soups, not like anyone actually has to toss back a hot liquid)…think like roast beef w/french onion, cheese w/ tomato, etc! Maybe a black bean to go with pork loin or bbq?

Or how about a baked potato or mashed potato bar…you could use small yukon gold potatoes to make more “snack” size than dinner side!

And being in the South, how about shrimp and grits or gumbo? Those are easy things to make a huge batch and then serve up into small tasting portions.

Our reception will be starting around the same time, but we’re just going with a pretty standard buffet dinner. We’re just going to space things out a bit. First there will be a cocktail hour… then a plated salad.. and finally the buffet dinner. Figure it will be at least 5 by then so that isn’t too crazy for dinner! Just mentioning it because if you wanted to go with something heavier, I’m sure you could do that.

Pasta is always a fan favorite and is easy to make ahead of time.

A baked potato bar could also be fun and cost effective.
