I think you will be fine. Fruit would be nice for variety, but I think you have enough food for people. Especially with a buffet, since people will be able to each as much as they want. I am also guessing the potato bar isn’t a passed app, and it will take some time to get through the line, eat it, etc.

It does seem like enough variety, but I would still add either a fruit or veggie/dip station. A lot of your options for appetizers and dinner are heavy, and not much “green” aside from the slaw (and obviously toppings) but no real veggies/salad. Even a small stationed plate would be fine, just so guests can mix it up and grab something like carrots or broccoli with a dip (ranch, or hummus maybe) or a fruit plate.

After seeing your post about having a salad I think it all sounds good! It actually sounds amazing! I dont think you need fruit unless it’s in sone sangria πŸ˜¬πŸ˜›

planningcsh:  Fruit sounds good! Or more vegetables/healthy stuff like salad. A few bowls of various salads on the buffet with the other apps will go a long way. If you have any vegetarians maybe tofu for the fajitas? It does sound like heavy food that will be filling enough. Personally, I woudn’t be interested in a mashed potato bar as an appetizer, to me mashed potatoes are a side dish but I can see that might be a personal preferance.

Fruit would be nice, but you don’t need it. Will you be providing salsa for the chips? That seems like a nice, lighter counterpoint to guacamole and quest when the other potato option is pretty heavy.
