This sunday we’re celebrating mother’s day at our home. I just need everyones opinions!
Our menu so far –
Chicken salad sandwiches on croissants or pumpernickel bread
Spinach, mushroom, and feta quiche (unsure of this)
Red Velvet Cupcakes
What do y’all think of the menu so far? And what do I do about a side dish? I was originally thinking quiche, but I feel like it just doesn’t “go”.
I’m open to all suggestions! Thanks 🙂

The menu sounds good, but I don’t really think of quiche as a side dish: it’s usually pretty heavy and I treat it like a main course. I would think about a cold vegetable, like a vegetable salad: it would go well with the rest of the cold dishes. Something slightly “fancier” than normal vegetables but still fairly easy to prepare.

And a green bean salad that looked really good:
I always think something green looks beautiful on a plate!

@RapunzelRapunzel: Agreed, a vegetable salad would go great with the sandwiches and usually everyone likes it!!
I wouldn’t do the quiche either, unless it was the main dish because it is very heavy.

I actually like the idea of offering chicken salad croissants & quiche. It’s great for a brunch, because you can choose whether you want more breakfast food or lunch food. I think a fruit salad and a traditional salad would be great additions to the menu (although, I don’t like ambrosia salad…if you think everyone will like it, you can just leave off additional fruit salad).

The menu sounds good! I love chicken salad with croissants. How about a nice green salad as a side dish? One of my favorites is:

-grilled portabello mushrooms (optional)
