Perhaps you could do little twinkle lights (think xmass lights?) around the umbrella pole.  You could also do lots of votive/tea light candles. If you could afford chair covers (or even different chairs) that could coordinate with the burgandy theme that could instantly make the feel of the tables look fancier.  I would even see if they would let you string light ON the umbrellas something like below:

You could buy inexpensive tablecloths and cut a hole in the center for the pole. I do that all the time for my patio table.

You can buy patio tablecloths with the hole already in.

I was going to suggest using jars and hanging them under the umbrella (saw this in a Crate and Barrel catalog)

So I did a little search and saw this w/ a centerpeice in the middle!

I would def use the pole to your advantage.  It will hard to do a “centerpiece” because that pole will be right in the way.  I’m not sure what your inside decor is, but you can could try to incorporate some of that on the pole.  You could do a grapevine type garland that winds up with your flowers attached to it, or lights would look good at night as well.  As for the table coverings, I would try to look for a fabric that kind of incorpoates both of those colors and maybe do table squares or rounds around the base of the pole instead of covering the whole thing.  Just a couple ideas off the top of my head.  Hope it helps!

If you didn’t want the umbrellas would they let you take them down?

Wrap some vines up the pole otherwise. They could be entwined with lights (if you can figure out how to plug them in) or flowers stuck in the vines.

I just remembered that there are rings of votive candles that are designed for a patio table they go around the pole. They are likely to be on clearance now if you can find them.
