I made a LOT of pasta accidently today.. LOL! now Im worried about what I’ll do with the left overs especially since were trying to be financially smart… trying is the key word.. any creative ideas??

Just plain pasta? What kind?
I would make some casseroles and freeze the. I would do a chicken alfredo type and a red sauce with sausage or ground beef bake. They are simple to do and you have to cook the pasta ahead of time anyway. Just prepare like you are going to bake it (remember a little extra sauce) and freeze instead.

I always do a simple pasta salad – cucumber, tomato, olives, and a dressing with balsamic vinager, lemon, oregano, olive oil and other spices.
*you could make pasta salad, all the below are just amounts you can fix to get the ratios you like:
1cup italian dressing to 1cup parmesean cheese (add as little or much as you like to get the consistency you like)
sliced green peppers
sliced hard salami
sliced red onion
sliced black olives (optional I personally don’t like olives so I omit)
*you could throw in some tuna and a saucey thing and have a tuna pasta thingy (rachel ray has a few tuna pasta recipies that can be eaten cold or hot)
*any type of jarred sauce
and I second the casseroles
I just eat pasta with butter and parmesan cheese. I had it a ton as a kid, and it stuck.
I totally second turning it into “Frozen dinners”. We often made extra pasta on purpose just so we can do this. Really easy – buy some jarred tomato sauce, portion into freezable containers and then pull out for lunches or when only one of you is home for dinner.
The other idea is to make chicken noodle soup – we always add the noodles after making the soup so they don’t go soggy. You can make it with a rotisserie store bought chicken easily.
Pasta salad. I make something similar to what CassandraC suggested, except I add a little bit of feta. So good and even better the day after!
MMM pasta bake would be perfect for pene and then you could just take out of the freezer and bake one night. I make something like this…

We never finish it all so I pack it up in those ziplock containers and we eat it for lunch the next day.
I also like to put Sriracha on the finished product but I like spicy things.
sautee up some spinach or asparagus in olive oil with some seasonings then toss with the salad. makes an easy and quick lunch for work
