I’m thinking about having a dessert bar, but I’d really like to avoid having to bake everything the day before the wedding =P so I’m wondering if any of you know of any desserts that are good for making ahead and/or able to be stored in the freezer.
so far, I’ve made some shortbread cookies and will probably do your standard chocolate chip cookies as well.
but do brownies freeze well? or cheesecake bars?
I would also be interested in desserts that can sit on the counter for a few days. thanks!

How about mini cakes? They were made for my shower and frozen way ahead of time and they all turned out tasting great. She used mini foil tin pans and a standard boxed cake mix like Duncan Hines. Each mix makes 3 little cake loafs. I had all kinds of flavors. One of the flavors was a chocolate brownie and it froze very well. Not sure about “regular” brownies tho. Sorry the pic is so huge, but that’s an idea of what they ended up looking like. Of course these weren’t for the wedding, but they could be decorated differently or popped out of the tins and set out with the other goodies!

@Eight6Eleven: hello date twin 🙂 those are such cute favors! I forgot to mention that there will actually also be wedding cake and cupcakes as well, haha. but if cake is freezable, maybe I can do cake pops for the dessert bar…

Cupcakes would freeze well and you’d just need to frost them the day of. Then again, that could still be a lot of work, depending on how many you have to make.
Little non fruit tarts would freeze well too – like butter or pecan tarts.
Brownies and baked cheesecakes also freeze well, so you’ve made good choices.

@cirrus: I originally wanted to make cupcakes myself, but I really don’t want to be doing anything on the day of the wedding except for enjoying myself 🙂 so we’ve hired a baker to make our wedding cake and cupcakes.
but I think I will add butter or pecan tarts to the list! thanks!

I make a mean cherry pretzel pie. It sounds gross but it is SOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO good. It’s this sweet/salty combo that is to die for. It’s a frozen pie and it just needs to come out about an hour before serving to soften up a bit. Let me know if you want the recipe and I’ll PM you the link (it’s on my blog so I don’t want to self promote by accident!!).

all “breads” freeze well either in bundt shape or mini loaf or cupcake like banana, carrot etc
Tortes/tartlettes made with ganaches (could do small ones with dark and white chocolate swirled) they really are super easy to make! or made with curds (like a lemon curd)
Tiramasu in individual plastic cups or in a large pan
peanut butter pie or any pie for that matter can be frozen unbaked or baked
I recently made this tarte (I edited it some, but the basic recipe is the same and it was easy and so tasty)
