I need help planning the menu for my wedding. It is a little difficult since we plan to hold our reception at night at a local park. They do have limited facilities and plenty of power. We can use the snack shack and it has a stove/oven and a cooler as well as a deep fryer. I have an unlimited number of electric roasters and crockpots available thanks to all the groomsmen being pastors. 🙂 I can also round up a ton of propane grills. Now that you have some background here is what I was thinking:
- marinated/grilled london broil
- cranberry russian chicken (this keeps extremely well in an electric roaster)
- maybe twice baked potatoes (can this be done in an electric roaster?)
- or scalloped potatoes
- italian pasta salad
- a few types of veggie
- fruit salad
- rolls or bread of some sort??
That is as far as I got. Also important to note that I have an equal or better number of kids coming. I adore oven roasted veggies but have never made them. Can they be done in an electric roaster? As long as I can provide a recipe I have enough help to get almost anything done. So all suggestions are welcome.
ETA I am allergic to alcohol so recipes that call for it are out 🙁
