Chicken breast, I cut it up into chunks, fry it in a skillet, chuck some sea salt and chilli ppowder on it, smother it in cheese, maybe add some pesto et voila!

Marinate chicken in Italian dressing overnight. Fry in pan in butter. Add BBQ sauce. Let that cook for about 5-10 minutes. Cover it in Italian cheese. If you want, you can throw some diced tomatoes on top. Yummo!

Darling Husband made an AMAZING chicken dish the other night. 

Chicken (with skin and bones – so thighs, legs, wings etc all perfect.

Garlic Powder

Curry Powder



1/2 Lemon Juice

1 Cup white wine

Olive oil


Rub all the dry ingredients onto the chicken.

Heat up the oil

Fry the chicken, skin-side down until it take a lovely caramelised colour.

Pour the wine and lemon juice in and turn the chicken over so skin-side is up.

Cook on a medium low heat until cooked through, adding water if needed

Eat with fingers and have plenty of napkins on hand – it gets seriously sticky and messy in the best way possible.

Easy, Cheesy Salsa Chicken

1) Place raw chicken breasts or tenderloins in glass or ceramic dish with a lid.  2) Top chicken with mild, medium or hot salsa.  3) Bake at 350 degrees in the oven for 45 mins to 1 hour (until it’s at proper temp.)  4) Sprinkle top with mozzarella cheese and melt slightly.  5) Serve with a side of rice and veggies.  *If you don’t have a glass or ceramic baking dish with a lid, you can line a pan with aluminum foil and then cover the chicken with aluminum foil.

Cheater Chicken Divan

1) Pour contents of cream of mushroom soup (use cream of broccoli soup if you don’t like mushrooms) into glass or ceramic baking dish with lid.  2) Add a 1/4 cup milk and stir until mixed.  3) Place chopped raw chicken breasts or tenderloin in soup mix and turn to coat the chicken.  4) Add frozen or fresh broccoli to soup/chicken mix and turn to coat. 5) Salt and pepper to taste.  6) Mix 8 oz shredded cheddar into bowl.  7) Bake at 350 for 45 mins to 1 hour (until it’s at proper temp.)  8) Serve with a side dish of rice.

Chicken, Rice and veggies.

Its basically the same concept of chicken and rice, just add either a can or two of mixed veggies or a bag of frozen mixed veggies if you want less sodium.

The ingredients are as follows.

chicken breast (2 to 3 depending on how big of a family you have)

1 can cream of mushroom or cream of chicken soup

3/4 rice

1 to 2 cans mixed veggies or frozen mixed veggies

Spray casserole dish. Size will depend on how big of a batch you make. Mix soup, rice, and veggies in bowl and pour in casserole dish. place chicken breasts on top and sprinkle with black pepper and/or paprika. Cover with foil. Bake for 45-55 minutes at 400. 

This recipe doubles, triples, and even quadruples really easily. I have even made the veggies, soup and rice just as a side dish before. Its pretty basic but its a one pan meal and its actually very tasty.

We do crokcpot chicken tacos. Seriously, to die for!! And it makes a ton 🙂


1 jar salsa

1 package boneless, skinless chicken breast

1 packet taco seasoning

Poor the seasoning and salsa into the crockpot, mix them together. Put the chicken in. Mix with salsa. Cook on low about 6-8 hours. If you use the thin sliced breast, it will cook quicker!

SO and I have been trying to eat healthier and for us that means a lot of chicken! I’m happy to see all these differnent ideas and can’t wait to try them. I made a “chicken roll up” the other night by butterflying a chicken breast then rolling it up with sauted spinach in the middle then put a strip of bacon over it for seasoning(okay so not very healthy but soooo tasty) Bake at 350 for 35-50 mins depending on how big your chicken breast is. =)

Pinterest has tons of chicken recipes. I’ve tried several and they have all been pretty good except one. My go to chicken recipe is Green chicken enchiladas mmm…

1 big can cream of chicken, 3-5 jalapenos (depending on how spicy you want) 2-3 chicken breast, corn tortillas, grated cheddar cheese, 1/2onion diced.

Boil jalapenos until light green color and stick in blender with cream of chicken and blend until smooth. boil chicken until done and then shred. You can fry the corn tortillas until tender and then set on plate lined with paper towels to dry. Dip tortillas in jalapeno mix and then layer with onion cheese and chicken until you have the amount you want. It’s so good and make with a side of spanish rice and refried beans mmm.

sweet & sour chicken with plain rice & stirfry veggies! We use the World Harbor brand sauce & add a few extra pineapple pieces to it, with bell peppers-shaved carrots-broccoli-& whatever other fav. veggies you have around. Quick & easy!

Grilled Spicy Lime Chicken with Blackened Corn Salsa. (Very healthy!!)

Rub chicken with blackening spice and set aside to marinate while you prep the salsa. 

Salsa Recipe:

1 can of corn nibblets, rinsed and dried1 x tsp cumin1 x cup diced cucumber (the ones with the edible skin) 1 x cup diced tomato1 x diced Jalapeno.5 x cup diced red onion1 x lime juiced1 x tsp agave or honey1 x small sweet potato (zapped in the microwave)

  • Char the corn niblets on a hot pan until they get a little black, add cumin and set aside to cool

  • Mix all cold ingredients together (tomato, cucumber, onion, jalapeno, lime juice, agave) to make salsa

  • Add cooled corn to salsa

  • Grill chicken breast, set aside to cool the dice into small pieces. 

  • Serve over smashed up sweet potato

Mix together and enjoy!
