I’ll only be in the city of my venue once between now and the wedding. I’m meeting with them to set up the menu/other day of details and was hoping to do the tasting at the same time. Apparently they only do tastings when they have other events planned. Due to my crazy schedule while I’m in the area, I can’t make the ONE option for tasting.
Does this sound like a REALLY bad idea? I’ll be guessing on what looks good on paper and having faith that the food will turn out ok.

We didn’t do a tasting, but I figured the food would be amazing because of the restaurant affiliated with the catering.

We were in the same spot. We couldn’t make the group tasting they had scheduled and the venue kept putting off a mini tasting. We just chose simple and classic meals. We figured how much could the mess up broasted chicken with mash potatoes and veggies. Our choices ended up tasting really good. I wouldn’t go for anything too different without trying it first.

I agree with you mrsmenow. I figure I’d go with pretty basic chicken and beef options. I just wondered if anyone else went through this as well. I’m glad it turned out well for you.
