We did hericot vertes with salmon and red bliss potato and parsnip mash (which was amazing!). Then we did stir fry station, so assorted veggies with that along with beef and chicken

@Mrs. Meowerson: Umm, can I come to your wedding? Hehe. Scallops and risotto are two of my favorite things! 

I’m not sure if it is any better than risotto as far as advanced prep goes, but gnocchi is almost equally nommable, and something of a blank slate for flavor profiles.

Hmm…I’m not sure why you couldn’t make risoto in bulk or ahead of time. My mom makes risoto all the time, and it always tastes just as good re-heated the next day for lunch!

Our caterer very bitchily told us risotto in bulk was a bad idea, but “the chef will make it [for our tasting] so we can see why.” …but risotto was an option at two of the other venues we looked at. Give it a taste and see what happens!

@Mrs. Meowerson: We were going to go with a risotto too, but opted for orechiette (pasta, looks like little hats!) with fresh herbs and romano. Our main dishes are tri-tip beef with pinot noir reduction and parmesan crusted chicken breast with lemon-arugula pesto, grilled market veggies. Hope this helps you decide!

We had garlic mashed potatoes and seasonal veggies. Mashed potatoes are my ultimate comfort food…I was one happy bride.

We are having pastas. Most, tort, and ravioli, with meatballs for the main course, bread and salad before.
