@bellasperanza:  Second that one! That’s a great recipe! Also I’ll use the Trader Joe’s frozen puff pastry sheets when I want to make a quick pie and don’t want to deal with cleaning my food processor!

Using alcohol will dry out the crust too quickly, IMO.   I rarely make pies anymore, but, here is my recipe

  • 4 cups all-purpose flour

  • 1 teaspoon baking powder

  • 2 teaspoons salt

  • 1 2/3 cups lard

  • 1/2 cup water

  • 1 egg, beaten

  • 1 tablespoon distilled white vinegar

  • If it is a sweet fruit pie, then also an egg white and sugar wash for the top near the end of baking

Flakiest pie crust you will ever eat but you cannot substitute in this recipe.

The one on the back of the Crisco can.  For me, it is no fail, and always, always, use ice cold water.  Anorther suggestion is to not roll out the dough a super ton.  This will toughen it and not make it flaky.  I actually do not roll it out.  I put a ball of dough in my pie pan and use a very small pastry roller and shape it with my hands. 

If you feel it is too much trouble, Pillsbury refrigerated pie crust rocks.
