Yes you can use carton whites. Be sure to measure out what they tell you is equivalent to one egg white.

You can use the yolks in certain things like hollandaise sauce, creme brulee, aioli, Pan de Muertos, chocolate mousse.

There are lots of recipes that use only yolks or a disproportionate yolks to whole eggs.

Yes, you can use the packaged egg whites to make angel food cake. It should say on the side of the package how many egg whites it contains so you’ll know what percentage of the container you need to use.

It does avoid that challenge of what to do with 12 egg yolks.

You can freeze egg yolks.

You can also freeze the yolks to use later! Freeze them one each in a ice cube tray so you can defrost them as you need them for dishes.
