Yay, our first CSA box of the year arrives today!
For those who are unfamiliar, CSA, or Community Supported Agriculture, is a system where you pay a farmer a sum of money before the growing season begins, and he then provides you with a “share” every week or every other week.
It’s great for fresh, local, organic veggies. And it forces me to eat lots of veggies :).
So, this week I’m getting kale, spinach, lettuce, spring onions, chives, and sweet potatoes. Anyone have favorite recipes to share with one or more of these ingredients?

I love my CSA too! Green Monster smoothies are a great way to use leftover fruits and veggies. For mine, I blend a handful of spinach, some kale, milk, orange juice, ground flax seed, a few frozen mango pieces (to sweeten and make it cold) and whatever fruit I have available (usually banana or apple). It’s a great and healthy way start the day… And it tastes pretty good too!

Yay for fresh produce! Our farmer’s market opens tomorrow, and I couldn’t be more excited. I’m determined to try some of the more exotic offerings this year, like eggs from something other than a chicken!
