How about a tofu scramble? Etra firm tofu is perfect and it’s very similar to an egg scramble. Would you like a recipe?

2 tlb safflower oil

1 cup onion diced

2 tsp galic minced

1 lb extra firm tofu crumbled

1/2 cup tomato diced

1 tsp tumeric

1 tsp sea salt

1 tsp paprika

3/4 tsp black pepper

1/2 tsp nutritional yeast (its ok if you don’t have this!)

pinch cayenne pepper

1 tbl shoyu to taste 


1. place oil in a large pan on medium high heat. add onion and garlic and cookuntil onions are soft, about 5 min, stirring frequently.

2.  Add tofu. Cook for 5 min stirring occasionally. Add remaining ingredients and cook for 5 min stirring occasionally.

  This is super easy. Basically treat it as if it was scrambled eggs. you can use bell pepper, mushrooms parsley. Etc.

Some variations!


Indian-Add 1/2 tsp curry and 1/2 tsp cumin

Mexican- Add 1 tsp chili powder, 1 tsp jalapeno (seeded and minced) and 1/2 cumin

Italian- Add 1 tsp basil (fresh and minced is best) 1 tsp parsley and 1 tsp oregano.


If you ever have black salt,you can even use it to make the tofu taste like egg. I’ve made wonderful tofu omlettes and the salt taste like egg yolk (sulfur) and it’s delicious!
