I attempted to make quinoa “mac n cheese” but halfway through realized I didn’t have any eggs for the binder in the sauce.  Lame!  So I made some whole grain pasta with frozen veggies, stirred in some seasoned soy crumbles, and used canned cream of mushroom heart healthy soup as sauce.  It was a last minute scramble for sure!  We refer to this type of dinner as “bowl dinner” but usually prefer it with mac n cheese as a treat lol

Everyone’s dinner sounds much more exciting than mine! I’m having leftover chili from last night. Not very exciting, but means I only have to reheat instead of cook tonight so YAY, that’s a win! πŸ™‚

ME: vegie burger, no bun, with ketchup and dill relish. Spring Salad with FF feta and italian dressing

DH: whatever he requests when he gets home. πŸ˜€ 

Tonight is my “big gym” night so Wednesday is well known as warming something up real quick night

I stayed home sick today and saw a yummy dish on Giada at Home. Made chicken with her marinade and rice.

 

  • 3/4 cup pineapple juice
  • 1/3 cup reduced-sodium soy sauce
  • 1/4 cup sweet Marsala wine
  • 1/4 packed cup light brown sugar
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 to 1 1/2 teaspoons crushed red pepper flakes

@globalmargaret:  Mmm I make roasted, mashed sweet potato, black bean and spinach burritos. I make a huge batch and freeze them. DH loves them, I think he’d eat them every day if he could.

I made a roast beef! The first one I’ve ever made in my life. The roasts were on sale this week at shoprite, and I got me a 3lb bottom round rump roast. I crusted it in salt and pepper, and it was delicious and pink and yummy. I also made mashed potatoes and honey carrots to go along with it (we won’t talk about the fail of a sweet potato biscuits that I made- which were supposed to go with a caramelized shallot/sage butter)

Fiance made dinner for us tonight.  It was some sort of….chicken breast with…..flour? and thai sauce on it, stuffed with broccoli and feta cheese.  We didn’t have any sides and he offered to go get something, but I didn’t care so he made us a fruit shake in the blender, haha.  It had lots of mango and strawberries and he served it in a short glass with a spoon (it was thick) with two strawberries cut to fit the edge of the glass!  We’re classy. πŸ˜‰

I made pizza stuffed chicken breast that I saw on pinterest except we used turkey breasts instead of chicken.
