Darling Husband doesn’t get home until really late tonight, so I won’t start dinner for a few hours yet, so I’m eating a bit of leftover mac and cheese as a snack right now…but realize it’s after 5 here, which is about when normal people are planning/making/eating dinner.
I’ve had chicken thighs marinating in a honey mustard curry sauce since last night, and I’m going to bake them later, and serve it with snap peas and brown rice.
What are you having for dinner?

Turkey Kielbasa with Brussel Sprouts, served with brown rice.
I’m nervous…never tried brussel sprouts but FH and I are determined to get more veggies in our diet. So far, I’ve learned I like asparagus, zuchinni, yellow squash, spinach in and on just about everything.

@MrsHart2Bee: Try brusselspouts sauteed in garlic and olive oil (sometimes we add bacon!!). Never thought I’d see the day that I ate brusselspouts but its SO GOOD

Maple Soy marinated flank steak and corn on the cob is on the menu tonight! We just bought a grill a few weeks ago and I’ve been grilling out every night. No idea how I lived without one.

We’ll probably end up having something boring for dinner – a salad, a sandwich. Something like that.
I would really like to grill out, but seeing as it’s 95 degrees right now, we’ll probably be staying away from the grill tonight!

Pad Thai! There is an asian market near here, so I buy some of the thick rice noodles, and they have a jar of the pad thai sauce, then I just fry up some chicken, eggs, and add peanuts, bean sprouts, and chives!

Taco Tuesday in my house… Tuesday nights I Zumba and my husband works late… So about 9pm wepick up tacos and hang out… My favorite night.. Because our son falls asleep by the time we eat (I feed him before I Zumba) and we focus on each other until we go to sleep…yey for Tuesday’s

@MrsHart2Bee: Good luck with the brussel sprouts! One of the few veggies I just can’t bring myself to enjoy…I eat them very begrudgingly when Mother-In-Law makes them. I adore asparagus, though.
@MrsWrangler: Really easy recipe: I usually cut down on the butter, and replace about half of it with olive oil, add a little ground mustard seed in addition to the dijon, throw in about half a tsp each of sage and nutmeg, end up baking it for way longer than she calls for, and broil it for the last 5 minutes or so. http://allrecipes.com/recipe/curried-honey-mustard-chicken/detail.aspx

@red_rose: That’s essentially what I do with the masaman curry – they sell a pre-made spice mix you just blend in with coconut milk and add chicken, peanuts, sweet potatoes, onions, etc. Finding our Asian food market has been such an adventure haha

@MrsHart2Bee: I can’t stand boiled brussel sprouts, they taste like wet dog to me ;o, but I LOVE them roasted in the oven. Cut in half and toss with olive oil and salt and pepper and roast for about half an hour or until they are getting brown and they are sooo tasty.

@bakerella: Mondays are the worst…Darling Husband didn’t get home until after midnight last night. I expect him around 10:30-11 tonight. He’s never home at a traditional dinner time, which makes me sad. On Fridays he sometimes gets home early, but it’s still usually not until 8-9.

@tootsweet: When we were living with my SIL and two nieces I made tacos every Tuesday. the girls would come in from school shouting about Taco Tuesday…we also had spaghetti and meatballs Wednesday, but they weren’t usually as vocally excited about that one.
