Tonight I made breaded parmasan chicken with corn on the cob…yum!

To make this:

I take bagged chicken breast partially thawed, cut in strips. Spray I can’t believe it’s not butter spray on the chicken and dip in italian bread crumbs and grated parmasan cheese and season salt. (I just throw the breading together and don’t measure them)

Bake at 350 for 20 mins, flip and cook an additional 10.

This is vegan but I made it last night and my meat eating SO loved it! It was definitely more time consuming because it was the first time I made it so I didn’t have everything ready. It’s from Skinny Bitch but now that I know how to do it, it seem so easy!

Crockpot ribs:

Boneless country-style ribs, rubbed with a bit of cayenne, salt & pepper, and brown sugar. Prop them up fatty side in against the crockpot walls. Cover in BBQ sauce, and leave for 4 hours on high or 6 hours on low.

Simple but delicious!

Veggie burgers from Whole Foods with a habanero-pineapple sauce (OMG I’m obsessed with this stuff!!!), and probably just some mixed vegetables to go along with it

There are lots of things I make that he loves. He always asks for my chicken wellington on our “special” days. Like his birthday or anniversary.

3-4 split boneless chicken breasts

fresh button mushrooms (the blue box at walmart)

small yellow onion chopped

One small tin of philidelphia cream cheese

2 cans of cresent rolls

Bottle of aged balsamic

 

Saute mushrooms and onion in butter and balsamic untill reduced and mushrooms loose moisture. Pour in bowl, set mix aside. Pan cook chick until about half cooked through, in same pan as mushrooms.

Open cresent rolls and unroll them.  Fit two together to make a square, put chicken in center, spoon mushroom mix over top, add a table spoon of cream cheese, seal edges together.

Pop in preheated oven at 350. Takes about 30 minutes, keep an eye on it though.
