Oh man.  Good luck with your training.  That could definitely turn into a trainwreck!  

My old dog was already scared of horses when he first met mine and she taught him in no uncertain terms to be respected.  Our rides were always very harmonious after that.  Our current dog doesn’t mind them at all.  It’s actually really fun to watch them communicate.  The dog can totally read the horse’s body language, and vice versa I think.

Poor dog and horse!  Have you considered a clicker training?  It would be a lot of work, but this type of training would use posibive reinforcement to teach dog exactly how to behave around horse (although I bet you already knew that given your background!).  It’s worked wonders for my own dog, who used to exhibit similar behavior around any unfamiliar animal (even smaller dogs).  He’s still a work in progress, but he’s come a long way!
