@secondchances: That’s what I was thinking! It looks dry to me because I know that the icing keeps it from getting stale too quickly.

i totally get why you like this cake but IMO i would worry about it going stale. Nobody likes eating stale cake. im sure you have it all figured out and if this is what you want then go for it and dont listen to anybody else. just consider the fact it may or may not go stale.

i like it! i think a baker could make it ahead of time, and then just freeze and thaw it the day before, and refrigerate it in an enclosed container/wrapper, and then just stack and ice it the day of.. not a baker though, so i don’t know for sure, but my mother doesn’t ice her cakes and they stay plenty fresh 🙂 

one thing that i would keep in mind is it probably won’t look as good if you have multiple flavours. if you’re having all vanilla (and maybe even if some have nuts or berries or what have you), it should be okay, but if you’re mixing chocolate/vanilla/red velvet, you’re going to lose the cohesiveness.

I really like that cake. Unlike the really put together cakes you see, it’something you look at and think “I really want to eat that cake”, rather than “Wow, that looks beautiful, but I’d hate to cut it.”

But I agree with PP that it might look a little strange without flowers. Are you planning on doing something else instead, or will it just be the layers of cake?

Most people peel off the fondant anyway, so who needs it? If you’re going without flowers, I definitely like the one with the blueberries on the bottom. The way they smoothed the inside frosting makes it look intentional and not unfinished. Also, thicker layers of inside frosting make it look more like a cake and less like a stack of pancakes.

These remind me of Norwegian wedding cakes :D……very little icing and have the potential to be a little rustic and can be decorated to your liking.

Maybe I’m crazy but I actually like the cake. . . It’s different, unique, and if you guys really love this cake (especially as your wedding cake) then please proceed with the order. It’s your day and your personality should beam out on that day!!!

like a pp said, id be worried about it going stale esp if as someone else mentioned you freeze it, then defrost it. even if fondant is peeled off, it keeps it fresh

the one with the thinnest layers than bm088 posted is the best option for me

I would actually prefer to eat this over traditional cakes…too much frosting is just gross to me (unless it’s chocolate frosting 😉 ). This is such a small, personal detail, why does your family need a say? Usually I’m one to appease the families involved, but, in this case, I would ignore them & go with what you want!
