My fiance and I just recently went to Naples, FL for a week in order to start planning our destination wedding.  We live in MD.  Much like you I wanted to get as much done as possible being we have never been there.  We had a little bit more time than you will but found we were able to get alot done and I feel soooo much better about the idea of working with people from another state.  

I would say the most important things to us were visiting the venue (we went to 5 and settled on the 1), meeting with a photographer (we met with 3) and videographer.  While we were there we also met with an officiant, hair/makeup artist, and DJ.  I did alot of research before hand and set up appointments with each vendor which made it easy to move from one appointment to the next.

because of the time constraints ideally you need to narrow down the vendor options via  reviews/website info. get prices via email for everything

for me, the most important things were photographer and entertainment (so band or DJ) so id make them top priority

after that…flowers mattered to me. what you need to do is have a very good idea of what you want and see if they can make a sample bouquet or whatever (some can some cant). 

cake wasnt super important to me as frankly it so often gets uneaten and its not really memorable

if you could squeeze in a hair and makeup trial thatd be awesome (but youd really need to book the person first for wedding, or pay for trial)

hotels and transport…id do online. i wouldnt spend time visiting a lot of them.
