EC is not a shape where you can ignore quality – the steep cuts show every flaw – you need to go with the highest possible clarity you can find. I would *NEVER* get an SI1 in an EC. You couldn’t go lower than VS1 in this shape. Also, if all she really cares about is size…EC is probably not the best option, as ECs face up small for their carat (that is to say, a 1 carat EC will look smaller than a 1 carat Round Brilliant).
Honestly, I think you should probably just stick with Round Brilliant or even an Oval cut (if she likes the elongated shapes). Both are going to hide flaws MUCH better, meaning you can get a lower clarity stone, as well as face up larger than an EC. Ovals face up even larger than RBs, and tend to be less expensive, so that seems to be the “most bang for your buck” situation.
