I love my panini press! I currently just do the basics, as well, although I have been dying to try this recipe:

I think it would also be yummy to try a chicken parmigian panini.

Do you get the Williams-Sonoma catalogs? They typically have a panini press in there, as well as a bunch of sandwich spreads and recipes. I always want to try them, but just never do. I think even just dressing up the basics by making a spread would be delish!

If I had a panini press, my first experiments would be to recreate Panera’s entire menu. Have fun!

I make paninis out of anything. Seriously. My latest craving has been a panini with eggplant, zucchini, roasted red peppers and mozz cheese. Drizzle some balsamic vinegar and sometimes I add some proscuitto. Yuuuum I want one right now. I also love grilled chicken with anything.. Recently made a grilled chicken and avocado panini.

I use this link when I need some panini inspiration: http://www.foodnetwork.com/recipes-and-cooking/50-panini/index.html

My favorite panino is pretty simple: whole wheat sourdough bread, honey mustard, swiss, green apple slices, roasted turkey, and tomato.  Fiance loves this with brie instead of swiss.

We don’t have a press, so we don’t really make them often, but that’s the one we both get from the local farmstand.  Mmmm.

Oooh yes to anything with fresh mozzarella cheese!  I’d love to make a panini with mozarella, basil, tomato, and balsamic vinegar – deeeeelicious!  Also, anything with sundried tomatoes.

Ooooh, ham and brie and raspberry jam.  Sounds gross, but it’s SO GOOD!

What about BBQ, little pepper jack, and raw Vidalia onions?

I don’t have any suggestions because I’m the person who went and bought a panini press just to make grilled cheese sammiches. I am enjoying reading the ideas though. Oh, and the steak and cheese from panera, I’d seriously recommend making that!

Brie in paninis is so amazing!  OMG I just remembered, spinach artichoke spread, ham, and mozarella or if you’re really bad, brie!  Yummmmm.

Brie, bacon, and spinach

Brie, sun-dried tomatoes, and any type of meat

Brie, dried cranberries, turkey, and honey mustard
