Mmmm I love pesto! Grilled veggies and chicken would go well. Shrimp rings are always popular. My favourites with pesto pasta are smoked salmon or candied salmon with either sundried tomatoes or lightly grilled grape tomatoes. Very pacific northwest too!

I’m doing the same thing with salads! I went to a really fansy wedding last year and they did it and it went great.

We are also doing a pasta bar ๐Ÿ™‚

We picked penne and cheese tortellini for the pastas. 1 filled and 1 regular is probably all people need, but watch out for long pastas like fettucine or regular spaghetti since those are hard to serve and can get quite messt.

For the sauces, the caterer agreed to three, but I would have loved more.

-Alfredo

-Marinara

-Pesto Cream

 

You could also add a meat sauce if it tastes different enough from your marinara. Here are some other ideas:

– White Clam Sauce

– Spicy Red Clam Sauce

– Butter Herb

– Roasted Red Pepper Cream Sauce

– Beer Cheese

The prior posters offered wonderful suggestions for sauces. I would add rose (I don’t know how to add the accent mark over the e), but that is the same as a pink sauce.

As for pasta types, farfalle (i.e. bowtie) and penne would be great choices for a pasta bar, as would cheese tortellini.

You also could consider adding hot and/or sweet Italian sausage and grilled chicken as meat offerings along with the meatballs.

Gnocci is my FAVORITE OF ALL TIME. It’s a sweet potato pasta, each hand-rolled. They’re so light and buttery and delicious!

Ravioli are incredibly easy to make. Pasta is literally flour, water, and egg, and the stuffing is whetever you want. Personally my favorite of all time is snowcrab sweet potato chestnut, but you can add whatever sounds good. You can get pasta makers and ravioli presses at any cooking store and they’re so, so easy to make. Do not be intimidated by making pasta- so easy. 

I also really like orocciete (“little ears” in English) because they hold sauce so well. 

Maybe you could add various sausages as well. Meatballs are pretty “meh” in my opionion- sausages have such a huge variety of flavors and spices!

 

I obviously LOVE your idea. Adding grilled salmon, cherry tomato, feta, spinach, cranberries, pine nuts, mozzarella di buffala, burratta, etc would really set it off for me. Oh my gosh my mouth is watering.

Oh! Another idea! (Sorry for the double post…)

 

To make it really PNW style, you could do a seafood risotto OR a seafood sauce over polenta. Polenta is in my top five favorite foods of all time and an amazing seafood gazpacho over creamy polenta… SO GOOD.

Great ideas, wanted to add some extras: parmesean cheese (the “sprinkle” and the shaved kind,) garlic bread, red pepper flakes and garlic powder on the side for serving.

@langloiswedding2013:  how are you planning to execute the bar? When i worked at fazolis (a fast food Italian chain) I cooked pasta in large amounts until al dente, drained it and cooled it down with cold water then immediately put them in large bins (plastic they look like giant plastic shoe boxes ) and coated them in olive oil and refrigerated them until I needed them. Then once I was ready, I put them in a “fryer” full of boiling water for 2-3 minutes and served.
