jaaadejade:  My concern is food safety– you don’t want to eat cold cuts that have been un-refrigerated for several hours. I’d probably go with a vegetarian pasta salad, fruit and veggie platter, and cheese (kept in a cooler) and crackers.

I like the idea of having sandwiches premade. It’ll make the queues for food quicker. Is there anyway you could do a BBQ for hot food?

Premade sandwiches (tuna, egg salad, various meats, pimento cheese), really good chips/crisps, fruits/veggies platter, hummus/guacamole/salsa for dips, vegetarian pasta salad, mixed olives/mushrooms/feta (some grocery stores have displays with different marinated olives), potato salad, a broccoli salad, petit fours, cookies, rice crispy treats, flavored lemonades. Any of these would be fun and yummy, and everything could be elevated a bit to make it more fancy
