    I am not sure how to vote on this, every pie I have made I have served not long after but I do believe you could freeze them.

    Pretty sure putting them in the fridge just overnight will be fine.  I wouldn’t see the need to freeze them unless you made them a week before or so.  But you can freeze if you choose to.

    hmmmmm, if it was me i would be buying them when i arrive and i like baking but 3 pies and travelling, nope – i would cheat 🙂

    I wouldn’t freeze them, pop them in the fridge and they should be fine. If you’re worried about the trip you can throw them in a cooler with an icepack but I don’t think I’d bother.

    I do agree with MissPumpkinPie unless your refrig likes to turn off and on a lot, as long as they are cool and not sweating I would think they would be fine, possibly some tinfoil over them would help. I would be careful transporting them since the pumpkin and cherry could crack on the ride, won’t be able to tell with the pecan unless in the crust.

    Just wrap and refrigerate, they’ll be fine.  To warm them up, put them in a 200 degree oven for 20 minutes or so.

    I’m making pies tonight too! 🙂

    Freezing is not necessary, nor do people do that. Keep them at room temperature (not in the fridge) and you’ll be fine.

    This thread reminds me of the time I baked Fiance a german chocolate cake for his birthday from scratch. Being a dude, and completely clueless he stuck it in the fridge and it dried out and tasted awful. I was so mad.

    You could bake them there, we ( and by we I mean I :/) do this at work when we have/need pastery things. make up everything, put it together and freeze it, then just pop it in the oven when you will need it.

    OR the easier way, you could cook them beforehand and frige them, then pop them in the oven for 20 mins. and they will be hot again.
