I work at a banquet facility, we do many sit down, (plated Meals) It does not matter to us if you have a seating arrangement. You put a card , (generally a tent card), at the entrance so each guest can take the card with their name on it when they walk in and place it on what ever table they sit at. That card will have some kind of mark on it that represents the meal they will be having. People use all kinds of symbols, colored stars, glued beads etc…however, I can tell you from experience that it would be better to have the actual name of the diner, or better still, have something relitivly large, for example because this is a green wedding how about a small plant as a favor with a plant pick that symbolilizes the meal, perhaps a plastic chick for chicken a plastic cow for beef etc… Not only would it be cute. But a huge favors to the servers who in a dimly lit room have a difficult time making out little shapes and often those little tent cards fall over and the server has no clue as to what is to be served. And just as a side note. If you are having reserved tables be sure that the people who the tables are reserved for are aware of this, If your aunt is suppose to sit at a reserved table she may not realise that. Besure to tell those people so ahead of time.
