I would go with:

Mini Corn Muffins w/ Pulled Pork or Sweet Potato Croquettes with shaved country ham 

Mixed field Greens w/ local tomatoes and fried Vidalia Onions, tossed with a dijon vinaigrette

Grain mustard and aged balsamic roasted pork tenderloin or Zinfandel and rosemary marinated filet of beef tenderloin with gorgonzola cream sauce

And the veggies…it would depend on what the seasonal veggies are and then whether I thought my guests would like collard greens.  I love them but not everyone does.
