Not sure if this is a new trend but what about cocktail receptions with appetizers/tapas being passed around as the guests graze and socialize?

I think food stations or tapas are truely the in thing right now.  I suppose its really more about the feel you want at your wedding.

I don’t neccessarily think buffets themselves are a new trend, but I’d say cake buffets are definitely trendy. And I’m doing it, lol!

I dont think buffets are a new trend, more so stations that are made to order food.

If you are doing a black-tie wedding, I would definitely suggest a plated meal, it is more elegant.  You could do tray passed hors d’ oeuvres during the cocktail hour, or have a couple stations where hors d’ oeuvres are made to order (risotto bar, quesadillas, bruschetta)

Last year at my sister’s wedding they had a mashed potato bar…which I thought was pretty awesome.  Who could say no to mashed potatoes served in a a martini glass with tons of different sauces and toppings? Yum!

The new trend is some sort of bar/buffet with specialty foods.  So like a mashed potato bar, a candy bar, a pie/dessert bar, a beef bar, etc.  But for black tie?  You might want to go classic on this part with a seated dinner.
