I would consider keeping it either freshly popped or sealed well. Otherwise, popcorn can get stale quickly, especially if the air has any humidity. Freshly popped will be very scented, so if that’s a problem, I would just have different flavors pre-bagged. Guests can open them and add candies/topping if they want. If the bags can reseal, that’s a plus, but if not, you can provide little stickers or something so they can fold the top back down and use the sticker to seal it.

@AbbeyMars:  We had a popcorn bar!!!! It was a HUGE hit, I highly recommend it. We didn’t do anything especially fancy. We set up all the buckets, scoops, and bags on a table during set up the day before and then covered it with a cloth. We bought bags of popcorn (Smartfood, Indiana Popcorn Company, and Orville Redenbacher).

When 9:30 rolled around, my bridesmaid just took off the sheet, opened the bags, and filled up the buckets with popcorn. We had the MC announce it and people flocked to it! I wish I had some pictures of it, but by the time the popcorn was put out the photographer had left.

I have been to a wedding, where they had a popcorn bar. They had one of those old school pocorn machines, that made the popcorn “fresh” and the venue’s waiters bagged them for the guests. If you don’t have a popcorn machine I would probably go with already bagged popcorn, in different flavors, as opposed to creating your own bag. That will only be messy, people will stand in line for too long etc. When you keep them in bags or jars, it will also not go stale as quick. I think something like this is cute:

@AbbeyMars:  i love popcorn.  all popcorn.  what a great idea!

if you can’t make it fresh with an old popcorn machine on site, i’d go with the already made popcorn like @LilacViolet: did.  i like the variety of flavours too.  it will be easy and stay fresh.  adding some other candy mixes and shakers are great too. 

if you are expecting your guests to take some home, make sure that the bags seal.  coffee type bags are great for this b/c they roll or fold down and have the tin ties.
