@confettiegg2000:  Just made and it came out to die for is homemade ricotta. Super easy!

http://www.foodnetwork.com/recipes/anne-burrell/homemade-ricotta-recipe/index.html (I recommend using lemon juice instead of vinegar) Then mix with some fresh garlic, basil, oregano and parsley. Bring crustinis to spread it on and maybe some crispy pancetta to top it off.   Its even better room temp so dont worry about it being cold.

Also you could bring a lemon orzo, roasted asparagus, cherry tomato, artichoke heart salad with goat cheese. Its good any temp, Cold, room temp, hot.

Shrimp salad, fresh cooked shrimp, mayo, crab boil seasoning, celery, red onion. yum! crackers or mini pita pockets to eat with it. (pack with a cold pack)

They all carry in tupperware easily and are good cold.
