I have read up on the replating that is sometimes necessary over time with white gold. My question is- if I get my ring engraved, will the replating that I may need done in the future cover the engraving? I’m looking to get my fiance’s name engraved and wondering whether down the line, that engraving will no longer be noticeable if I have to get it replated?

Nope! I had mine engraved and have had it replated twice and the engraving is still visible

Plating is very, very, very thin. It won’t affect the engraving detail.

plating does not build up if you get it done multiple times. the old layer will kind of melt off during the process that the new layer is being applied.
