Quick and easy is all I know how to do and its stir fry just about any meat and veggie combo – takes about 15 minutes. This is my weekday cooking since I dont get home until 8 most days and am starving by then and have no patience to wait more than 20 minutes for food. Some of my favorites:
Beef and tomato – slice flank or sirion tips, cube tomatos, and onion if you like onion, toss them in a pan with a little oil. Top with some oyster sauce – just cook, stirring occasionally. It’ll end up juicy, just crack an egg in it and stir. Done.
Curry beef and veggie – slice beef, cut veggies toss in pot. Add a little curry powder, sugar, oyster sauce, cook and done – 10 mintes
Black bean sauce or chili sauce with some meat or veggie — same thing.
Hopefully its not too bland for your taste, but, at least its pretty healthy too. No creams and butters or too much soduim.
I love the crockpot too. I usually do that on Sunday and pack left overs for lunch.

Crockpots are the best BUT for an alternative, and I’m cooking it now: chicken covered with cream of mushroom/cream of chicken soup mixed with a bit of milk and a 1/2 packet of french onion soup mix. Bake at 350 for 1 hr and serve over rice. YUM and the oven just beeped 🙂
