Hi everyone!! We are having our wedding ceremony/reception in our backyard with just our closest family and a few friends, totalling between 18 and 21 people depending on who can get time off work, plane tickets, etc.
I have thought up the menu and made sure there are plenty of choices for everyone there. My only question is how much food to actually make.
For meats we will be having eye of round steaks, lemon pepper thin sliced chicken breasts, and shrimp skewers, although I’m fairly sure the majority of attendees will be choosing the chicken.
For salads, I will be making a macaroni salad (shells, tuna, peas, red onion, mayo) a brocolli salad (fresh brocolli, grapes, boiled eggs, sunflower seeds, mayo-vinegar-sugar dressing) and a watergate salad (pistachio pudding, pinapple, marshmellows, walnuts, cool whip).
Along with these, we will also be having a garden salad with a few different dressing choices for the lighter eaters, chips and dip, a fruit tray, and rolls with butter.
My question is, how much of each homemade salad would you make? I know not everyone will eat every type, and a few will only have the garden salad. I wouldn’t mind having leftovers to eat the next few days, but we’re also on a budget so I don’t wanna go completely overkill. Suggestions on how much meat to buy would also be appreciated.
I’ve never prepared food for such a large crowd before! PLEASE HELP ME BEES!!
